Sweet Potato Casserole
2 cups of mashed sweet potatoes
1 stick of butter
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup evaporated milk
Topping:
1 cup crushed cornflakes
1/2 cup brown sugar
1/2 stick of melted butter
1/4 cup chopped pecans
Preheat oven to 400 degrees. Mix all casserole ingredients well. Pour into baking dish and bake for 20 minutes.
For topping, add all ingredients to melted butter. Mix well and spread over hot baked casserole. Bake an additional 10 minutes at 400 degrees.
